Can I ask a stupid question....

 

When you make cakes for celebration cakes how do you get the sponges to come out with flat tops ? I'm presuming you don't chop the top off as that wouldn't be much good for decorating on to. :?:

 

It depends on which sponge you're using. If it's a normal victoria-type spong then yes, I chop the rounded top layer off - I don't have one of these but I'm trying to persuade DH but it's a great example of what happens: http://www.agbayproducts.com/ This is also incredibly useful if my oven has baked unevenly and it's a bit scorched! (which not a nice way of saying burnt, honest guv'nor - ahem, let's move on.... lol). For a square that size (9 inch square), for example, I almost invariably bake a larger sponge (my usual size is 12" x 16") and then cut down to size which all my family and friends love because they get the offcuts!

 

If it's a fruit sponge then I don't tort the cake as they are denser and don't tort well but tend to stay flatter during the baking process anyway and so you turn it upside down and then fill in the gaps around the bottom with marzipan so you have an even surface to decorate. I hope this makes sense.
