The way I understand it, a boy chicken is a chick until you can tell it's a boy; a cockerel until it is a year old, and a cock thereafter (or until it is dinner, if you prefer). Somehow, cockerel sounds rather more polite, so that's what we call Darcy without worrying too much when his birthday is!
