Swedish Kardemumma (cardamon) cake (for Janty!)

I thought you might like to see my Swedish recipe for Kardemummakaka, which is a Swedish cardamon recipe - I mentioned it during the craft weekend and Janty went all of a quiver - I promised to translate it and here it is. :wink:

 

Swedish recipes always use DL measurements, rather than Kg/g or whatever - if you don't have a DL cup measure, then you can use a pyrex jug or similar - 1 DL = 100ml!!

 

Kardemummakaka

 

100g margarine or butter

1 egg

1.5dl sugar

1/5dl milk

4dl plain flour

2 tsp baking powder

1tsp cardamon seeds

 

Garnish

4-5 tbs pearlsugar (these are large, white sugar crystals, I think you can get cake maker's sugar or something like this!)

10-15 roughly chopped almonds

 

Oven temp 175degC

 

1. Grease a round cake tin, about 24cm

2. Melt the fat and then leave to cool

3. Whisk the egg and sugar for some minutes, until it's pale and fluffy

4. Add the flour, baking powder, the roughly ground cardamon seeds, milk and fat and mix.

5. Transfer the mix to the cake tin. Sprinkle over the pearlsugar and almonds

6. Cook the cake in the oven for about 30 minutes - check it's cooked through and if it needs a bit longer, pop it back in for 10 minutes! (this isn't an exact measurement time-wise, as I've halved the quantities, otherwise it makes a huge, tall cake which might be a bit much for you if you're not sure about cardamon - this version makes a flatter cake, perfect served with coffee!)

I made this yesterday - I used demerara sugar as the topping.

 

I think I used a larger tin than I should have - an 8" round - and it is a bit on the dry side. I tested it 5 minutes before I took it out and it didn't seem cooked in the middle :roll: I wish I'd taken it out then :roll:

 

The flavour is divine :drool: - and it will be nice with custard :D

Looks like a sockerkaka with added cardemom, Omletina. The sockerkaka recipe I use has 2 eggs and only 1 dl milk. It is a favourite when we "fikar" (translation: coffee and cake time) at 3 pm when we are on summer hols in our sommarstuga (summer house). I am in charge of cakes and have to make cakes every day as there are usually 8 or 10 or even 14 of us staying there, so all the cake goes each day. I will definitely add this recipe to my collection for next summer's cake-making. It is always good to find recipes that don't use much egg or butter as (when we are in Sweden) we don't have many eggs available because the nearest shop is a 4 mile boat-ride away in our rather small boat with outboard engine and we can only go when the sea is calm!

If anyone has a decent recipe for pepparkakor then could they post it please? The ikea ones just aren't the same :(

 

I am in Copenhagen at the end of the month, so will be stocking up for Christmas. Not quite the same as Swedish biscuits, but the Danes are pretty close :D
