My Ocado delivery is coming tonight and it will have the last of the ingredients I need to make this tomorrow This will be the first time I have ever made mincemeat so I am a bit nervous but, at the same time, as its a delia recipe I am not too worried either. chickencam Posted September 11, 2009 Share Posted September 11, 2009 I make Delia's mincemeat from her Christmas book every year and it is so nice. Before I made it I wasn't that keen on mincemeat, but this is so citrusy and delicious. I have some in the cupboard from 2 years ago and it is still ok, but it is important to cook it very slowly for the time stated. I made some one year in a new fan oven and a big cast iron casserole and I don't think the temperature was right because it was very mushy and the fat didn't reset in lumps around the fruit, it fermented after about 6 months. I always use the conventional setting on my oven now and just do it in the stainless steel bowl that I have mixed it in sealed with tin foil. Plus so many bought mincemeats add too much fancy stuff and glace cherries which in my opinion should be banned from mincemeat and Christmas cakes.
