Lesley Posted December 22, 2006 Share Posted December 22, 2006 This is the one I use Sarah Mayonnaise 2 egg yolks (de-stringed!) 50ml cider vinegar (or white wine vinegar) 1tsp Honey 1 1/2 tsp Dijon mustard pinch of salt All whizzed slightly in the processor....... then with the processor running, slowly drizzle in 500ml of light olive oil. Taste and adjust honey/mustard/vinegar to your taste. Will make two honey jars full and I keep it for around two weeks. I stick a small label on the bottom of the jar with the date I made it. I'm using home-made tarragon vinegar to make mine at the moment and still have tarragon in the garden to add some chopped up. Quote Link to comment Share on other sites More sharing options...

Cinnamon Posted December 23, 2006 Author Share Posted December 23, 2006 Just made a half batch & I think it is gorgeous The children are finding it too vinegary though - I used White Wine vinegar...will cider vinegar cut down on that sharp taste do you think? Now,I reckon I can mutate it into a sort of Salad Cream if I think about it - any ideas? Nicola H Posted January 1, 2007 Share Posted January 1, 2007 Sarah I add a level teaspoon of Dijon mustard and a dash of vinegar to mine and it tastes really good .........Experiment and see how it tastes with just a little bit of mustard at first until you get it right, I also like a little bit of garlic in mine but the rest of the family complain......... OH has told me to mention that we get an average of 2 a day from 4 chickens so if you want our girls to have a word with your lot just let us know!
