Erm...but she wants to know ...what do you put on your nuts? I made up a hamper for my parents from some bits from you & some other choccy bits etc. They were very impressed & send their thanks! Cinnamon Posted December 29, 2009 Share Posted December 29, 2009 Not sure, & I know he's travelling this evening,but I use this recipe for my hampers & have for ages............ I have a feeling that Christian uses the same one Its brill & is perfect every time. 2 tbsp veg oil 25g Butter 2 tsp chilli powder 1 tsp ground cummin 1 tsp salt 500g assorted unsalted mixed nuts (almonds,pecans,cashews,brazils) Pre heat oven to 190/375/G5 Heat oil & butter in a large frying pan,add spices,salt & nuts & toss to coat evenly (I use a roasting tin) Cook towards the top of the oven for 20 mins until golden. Stir well & leave to cool. Christian Posted December 30, 2009 Share Posted December 30, 2009 Honestly! All this talk of my nuts Ok, here goes! One of those recipes that sort of 'evolves' with tasting, adding etc! Unsalted nuts golden castor sugar cinnamon mixed spice pinch of salt freshly ground nutmeg sunflower oil - just a tiny bit to coat the nuts and make the spices stick and the secret ingredient - apple cinnamon sugar from Germany! Sorry! Mix everything together and bake in a low oven 120-140C for 30-40 minutes or so until the nuts are crunchy but not too toasted, turn every 15 minutes. Allow to cool and put in jars.
