Charlottechicken Posted January 5, 2010 Share Posted January 5, 2010 Hi sorry for the delay, I'm an early to bed person Southern Fried Chicken Serves 4 8 chicken thighs (although it says you can use any chicken pieces) 600ml/20 fl oz milk 250g/8.5 oz plain flour 1 tsp cayenne pepper 1 tsp paprika half tsp chilli powder half tsp each of dried chervil, parsley, chives and tarragon half tsp celery salt half tsp garlic powder or granules 1 level tsp salt Black pepper to taste Oil for cooking Whisk chilli, cayenne pepper and paprika into the milk. Place the chicken portions in the milk and soak for 4 to 5 hours. Sieve flour and salt into a bowl and stir in the herbs, celery salt and garlic. Prepare a baking tray with sufficient oil to coat the whole tray very thinly. Heat the oven to 200c , 390f or gas 6. Lift each piece of chicken out of the milk mixture and shake off the excess liquid, then dip in the seasoned flour and coat well. Place each piece of chicken on the baking tray and put in the oven.
