You could roast it like chicken. Or joint it and braise it in a big pan with shredded savoy cabbage, juniper berries and cream (maybe you add that at the end). Good with boiled potatoes.

 

Will dig out the recipe if you like.

 

thanks, i cooked as you said roasting it like a chicken. it wsa nice. i enjoyed it.
