Ok..so I know this is old hat to most of you, but this is a fabulous cook book which as a vegetarian I had previously overlooked. However...it was marked down at our local Sussex Stationers and so on a bit of an impulse I made a purchase very recently

 

I have tried already the Beetroot Hummous (yummy) the Dukka...ditto, the leek and bean salad thingy, the tabbouleh type salad, the egg tartare sandwich filling....and there's loads still to try and i've had it less than a week :) I love it because it inspires a can do attitude that makes me really really think about what I am cooking and how I can make sure nothing is wasted.I do try to be careful with ingredients and resources in my cooking and absolutely hate food waste..(my husband works in the fresh supply chain for many major supermarkets and I know what goes on :(:( ).

 

Anyway as you may have already guessed one of the bits of the book that I love is the lunchbox bit...so I thought I'd ask..what is your favourite sandwich filling...

I'll go first with my emergency lunchbox favourite (for those times you have forgotten to get anything in :oops: ) marmite and horseradish with cress (or without cress depending on how very poorly organised I have been)

we first came across this in starbucks...the bread has to be a nice malty type, filling is humous, chopped, sweet red pepper and spinach. Really, really yum!

 

but my favourite sort of sandwich is a pannini with that thin quick fry steak and nice browned onions, maybe a bit of mustard and/or sometimes a nice melty cheese.

 

but sometimes a really nice chedder with a good chutney on a white bap...

 

or a sweet cured bacon on white bread with lots of butter and tomato sauce!

 

ooooooooooooooo my mouth is so watering now! :drool:

It really depends on what I fancy - Cheddar & Pickle (got to be Branston),Egg mashed with salad cream & freshly sliced tomatoes,or the one I have been favouring this week - just salad,but use salad cream or mayo as the spread on the bread,then pile it up with lettuce,cucumber,beetroot,tomato & spring onions sliced up.....delicious!

 

Another favourite is Brie, Mango Chutney & those crunchy bacon bits,in a fresh white baguette.

One of my favs is hummus spread on one side, chilli jam on the other, then sliced falafal, salad and fresh corriander if you have some. Really yummy and great in a pittta too. :drool:

Another good one is pastrami or very thinly cut beef with mustard & mayo mixed spread & instead of butter or marg with sliced gherkin - or smoked mackerel and horseradish.

Anyone got a good falafel recipe? They sound good.

 

My favourites are ham with sliced hard boiled egg.

ham and salad

cheese and pickle. Grated cheese on brown bread with a small amount of pickle - really hits the hungry spot. :D

and of course egg mashed with salad cream and cress or parsley, (not just sliced onto hard wholemeal bread with very little spread like mother used to make for my packed lunch when I was a child :vom: )

Lovely oozy summer ripened warm tomato with black pepper :drool:

 

Edited to say I love this book too I have only just really started looking at it. I have just taken the lemon drizzle out of the oven. He uses an enormous amount of drizzle I will see what it is like.

I made my own falafel once, it was soooooooooooooooooo sticky and such a faff i never bothered again. Might try again and see if it comes out the same :lol:
