I actually tend to use leeks as a quick dish. Chop up a leek or two and fry up in some olive oil. Add some tinned tuna at a convenient point, then make up a cheese sauce with plenty of mature cheddar. Add the sauce to the tuna and leeks, then serve on some short pasta such as fusilli, conchigli, penne or maccheroni. A good grinding or two of black pepper is mandatory.
