Patricia W
Calling all you clever people who make small individual christmas cakes, can you tell me do you use a normal christmas cake recipe, what do you cook them in and how long for? bluekarin
oooh! I'v just read a recipe today for something like this. It's not a Christmas cake as such, but a fruit tea cake. http://www.thepinkwhisk.co.uk/2010/11/berry-tea-loaf.html I nearly bought some of the mini loaf cases when Iwas in Sainsburys a few days ago. Bet they'll all be gone now
Lesley
I used to use empty ( and clean! ) small baked bean cans, using a normal Christmas cake recipe. I can't remember the cooking times for them - Christian is making them so hopefully he'll be along with timings for you.

..lay a little egg for me
I use one of these **CLICK**. I use double quantity of Delia's Rich Fruit Cake. That's very clever! I wish I had known about these tins when I did mine. I used some teeny cake tins I found in TKMaxx of all places. I put them in a slow oven (150 degrees C) for about 3 hours and tested them often until they were done so I'm not sure how long it took all together. I used half measures of a modified Delia recipe to do two cakes (one for each of my brothers-in-law). The original recipe uses 2lb dried fruit, 5 eggs and 9 oz butter/sugar/flour. Christian
Christian is making them so hopefully he'll be along with timings for you. Yep!! I have made 30+ mini Christmas cakes, so far, this year I use baked bean tins too, the small size. Wash out thoroughly remembering to not use the ring pull to open the tin, as it leaves a lip. best to turn it upside down and use a tin opener. I line the inside and outside with baking parchment and place a disc of parchment in the base. I cook them for 45-50 minutes at 150-160C in a fan oven. Test with a skewer and if they come out clean, they are done. The Nigella easy action Christmas cake recipe makes 9-10 mini cakes. When they are cool, I wrap them in parchment paper (I have rolls of the stuff, find Waitrose to be the best quality) and then foil. They keep for months in a cool place.
