Breakfast Tortillas

I am a massive fan of cooked food at breakfast time- here is a quick easy way to ring the changes in the morning with whatever comes to hand. You need a packet of flour or corn Tortillas, some grated cheddar, and whatever is in the fridge!

 

Heat (medium) a fying pan of similar size to the Tortillas with a drop or spray of veg oil (not olive) and place one in the bottom of the pan.

Add a generous sprinkle of grated cheddar, avoiding the very outer edges.

Raid the fridge- add whatever cooked meats you have, sliced chorizo works very well, as does salami and shredded chicken.

Top with whatever salad or cooked or jarred veg you have (I like sliced tomatoes and preserved pimentos)

Season, add some mexican-style spices if you like them.

Place another Tortilla on top and carefully with a spatula flip over (if this makes you nervous chuck it under a hot grill instead)

Slide onto a plate and cut into quarters.

 

Obviously vegetarians can omit the meat and add extra veg!

Sounds lovely, but not for breakfast, waffles is about as exotic I get at that time of day. I made some yesterday because I had some out of date yoghurt that needed using, I thought that my children who always have poached eggs for breakfast would object, but all that was left for myself and the OH were the dregs :roll:

Aha! Quesadillas! We often have that for dinner with some salad :D Feeling peckish now and might have to go and make one :lol:

They are lovely though arent they? @ chickencam I cant do sweet in the morning for some reason...

 

I thought that you were describing quesadillas as well - at least that is what Jamie O calls that sort of dish in one of his recipe books. Whatever they are called - sounds a nice idea and I will certainly give it a go - thanks!
