For the cake: 250ml Guinness; 250g unsalted butter; 75g Cocoa; 400g caster sugar; 1x142ml pot sour cream; 2 eggs; 1 teaspoon vanilla extract; 275g plain flour; 2 1/2 teaspoons bicarb of soda; For the topping: 300g cream cheese; 150g icing sugar; 125ml double cream. -Preheat oven to gas mark 4/180c; -butter and line a 23cm tin; -pour guinness into a large pan and add the butter in slices- heat until melted; -whisk the cocoa and sugar into the pan; -beat the sour cream and eggs together with the vanilla and pour into the pan; -finally whisk in the flour and bicarb; -bake for about 45mins-1hour; -leave until completely cool before icing; -lightly whip the cream cheese until smooth, sieve over the icing sugar and beat them both together; -add the cream and beat again until it makes a spreadable consistency; -ice the top of the cake and enjoy!! I kept one cake out and froze the other, neither lasted beyond a couple of days A success and I shall use it as my Guinness cake recipe now - I had been using Lesley's Whacky Cake, but I prefer the texture of this one.
