I did the Trapani-style Rigatoni, Griddle Chicory Salad, Rocket and Parmesan salad and Limoncello kinda trifle tonight and it was lovely. Took me an hour but I did have to blanch my almonds Tasted lovely. I wouldn't have done chicory normally but it was really nice. I would put more anchovy in next time and I couldn't work out if I needed to grate the parmesan first so I did but could maybe have saved some time by just throwing it into the mixer as a lump ? I realised I spent too long on the trifle as I carefully blended ingredients then found I needed to whisk them all so I should have just chucked a load in together. We're planning to work our way through a few more menus at the w/e to get some ideas for quick week day meals but I would never do a dessert for normal weekday I would love to know how anyone else has done. First time round they all took about 50 mins (mostly because reading and understanding the recipes took time!), but some we've done twice or more and these have been around 30 mins.
