ubereglu
I got a really nice trial veg box the other week and still have a few things to use up. Including a rather large swede-do any of you have any good recipes or suggestions for how to use it up-apart from in bubble and squeak and mashed! CatieB
Mashed potato, swede and carrot mixed together. Cook it all together, the swede and carrot in little cubes compared to the potatoes and then mash together with either butter and milk or just yoghurt. Yum yum yum and this is from someone who doesn't like either swede or carrot. The mix compliments each other very well.... It's from a Jamie Oliver recipe. Yum yum yum and this is from someone who doesn't like either swede or carrot. The mix compliments each other very well.... It's from a Jamie Oliver recipe. Well, I didn't know it's Jamie-promoted, but that's approximately what I often do. I cut spuds into chunks, swede and carrots into cubes and then chuck the lot into a steamer and steam for about 25 mins. I then empty into a bowl, add some butter, a little milk and a generous grinding of black pepper, then mash up until it's a co"Ooops, word censored!" mash (i.e. with some lumps in). Despite the fact one of my kids doesn't really like potatoes, the family all wolf this down. Something else you may want to consider is this recipe. I've tried parsnips with parmesan, but this variation with swede should work really well.
