Ellie hasn't started laying yet so the 'problem' will get worse! I have found the perfect recipe!!!!!! Rick Stein's Sunken Chocolate Cake - it uses SIX eggs! Lauren has chosen it for her Birthday cake as well as she has a wheat intolerance (mind you - she doesn't like chocolate much either!) We had something similar on Sunday - Andrew (SIL) cooked his Chocolate Brownies for dessert - now wonder my ankle is playing up!, it's all the extra weight! When I have loads, I make lemon curd. That uses 4 whole eggs and 4 egg yolks - the whites go in the freezer for meringues. Lesley Posted March 8, 2005 Author Share Posted March 8, 2005 Hi Trish The recipe is in Rick Stein's Food Heroes book. Lauren and I are both wheat intolerant but can tolerate Spelt flour. The recipe uses just 60g of flour which we will substitute with Spelt. This may not be suitable for your BIL but you could probably substitute with another flour which he can tolerate. Sounds okay but when the fully gluten free flours are used for cakes normally they are useless, but if spelt works okay it's worth a try. I prefer Spelt anyway even though I don't need to. The bulk of dry stuff is almonds so the flour really is incidental in this recipe - worth trying.
