Ain't Nobody Here
I've always liked aubergines but the method I'd always used of salting them then frying them was such a faff I gave up on them years ago. Then I came across a Jamie Oliver recipe which said just stick them in the microwave, skin/stalk & all - 7 mins for 2 medium or about 8 for a large. They come out lovely and squidgy, just right for scooping out and cooking in a ratatouille or anything else you fancy. Sorry if I'm the last on the planet to know about this but I'm so chuffed that they're so easy to cook after all .
lizinsa
I've never heard of that until now. I have an aubergine in the fridge, I now know how it'll be cooked tomorrow night, will feedback to let you know what I think!
Lavenders_Blue
I have never tried that, but I certainly don't faff around with salting etc. I just slice and cook. Most aubergines are not bitter enough to need salting nowadays.
Ain't Nobody Here
Hope it works for you, Lizzy .
bluekarin
I think aubergines used to need to be salted as they were bitter. The ones grown nowadays are sweeter so don't need the faff The micro method is a great idea though, so thanks for the tip
Bramble
I'll probably be shot for saying this, but I think aubergines are the world's most pointless vegetable I'm a veggie and when I eat out usually the only veggie option on the menu contains the only two vegetables I can't stand - mushrooms and aubergines - am I missing something - is there some secret to enjoying aubergines that has passed me by!!!??? mullethunter
I'm with you Bramble. I like my veggies but aubergines and courgettes - yuk

Ain't Nobody Here
Must admit they don't have a lot of flavour so I know what you mean but if you add them to tomatoes, courgettes & peppers with lots of seasoning and herbs it does make a lovely ratatouille! I'm not having that about mushrooms though . I love them .
Lavenders_Blue
Bramble - I'd love to know where you go to find aubergines as the veggie option on a menu?! I am also veggie and I LOVE aubergines, but I do also HATE mushrooms which seem to be the veggie option 99.9% of the time. I hardly ever see aubergines though! I could do with some "aubergine love" coaching from you Lavenders_Blue!!!! Veggie option always seems to be "Aubergine and mushroom something or other" ... horrible!!! Lavenders_Blue
Ugh, why contaminate a perfectly good aubergine with mushrooms?!
