Packed Lunches

We usually have wraps rather than sandwiches (using the flat tortilla things). Or sometimes I take a ploughmans type selection of things (eggs, cheese, tomatoes, crackers or rice cakes). Often carrot sticks and lots of fruit.

 

But my favourite is home made pot noodle. In a food flask, put some cooked noodles, a stock pot or some home made very concentrated stock, some very finely chopped veggies (carrots, spring onions, mushrooms, peppers), maybe some shredded cooked meat, top with some ginger and chilli and maybe 5 spice. When you're ready to eat, add boiling water, shake around and leave for 5 minutes. Shake around again and then eat your healthy pot noodle! The best thing when you're working outside in the winter (water from a flask).

We make mixed salads with olives, pickles, carrot, tomatoes, lettuce, spinach, herbs etc whatever is cheap in Lidl etc then include a small pot of tuna, cheese, seafood, eggs ... serve with a few crackers or crispbreads if necessary. My YD makes pasta salads or cous cous with chopped raw veg herbs and spices and cold meat, cheese or nuts sometimes roasted veg in the cous cous or pasta. You make several of these in bulk at the weekend.

Soup is a great one if you have access to a microwave as are baked beans, left over one pots etc.

Quiche works well for lunch as do pasties both of which can be home made at weekends and frozen if necessary :D

Start with some carbs - rice, couscous, pasta or leftover potato. Add veg - I put frozen peas and sweet corn straight in without cooking and they're defrosted by lunchtime, but tomato, spring onion, celery, grated carrot, cucumber or just leftover veg from last night's tea. Add protein - ham, cheese, tuna, hard boiled egg, leftover stew, chilli, cooked chicken etc. And then jazz it up with whatever you fancy e.g. balsamic vinegar, salad dressing, sunflower or pumpkin seeds (I usually toast them first), nuts; a few raisins ... get creative.

 

I used to just take leftovers from the previous night's meal but I don't mind eating cold stew, not everyone finds that palatable! Make sure you've got a lock-and-lock type container so it doesn't leak, believe me gravy and tomato are no friends to your book or iPad. Apart from being healthier you'll save a small fortune.
