I was surprised that my hen's delicious fresh eggs make lousy hard boiled eggs for salads! They don't peel very well and I lose half the white to the shell.

Is this something everyone experiences or can I suddenly not boil an egg???!

Do I have to leave some eggs get really old before I boil them to solve the problem?

They are easier to peel if they are a week or so old

Thats why supermarket eggs are easy to peel - they are generally a week old already.

 

As they get older a small air gap forms between the egg & the shell, meaning you can peel without the egg white sticking to the shell.

 

They are easy to peel after 3-4 days

I found exactly the same thing when I boiled an egg for my son the other day. I stood there trying to peel off the shell but taking lumps of white with it in the process. To make matters worse it was the first white shelled egg I've ever cooked - I couldn't make out where I'd taken off the shell and where I hadn't!

Poach them up to a few days old, after that boil them!

Yeah use the oldest eggs for boiling and the lovely new ones for poaching, frying, omlettes etc.

Ive found that my girls eggs only need a 2 minute boil for soft boiled, but others may find that a personal thing.

After boiling the eggs I sit them in cold water for a few minutes then roll it between the palm of my hand and the worktop until it is 'smashed' all over - the shell comes off easily in 1 or 2 pieces - try it and see
