Stoat killed hens asleep in the Eglu

[stoobie]

I tried the egg weight recipe yesterday and for the first time in my 33 years I made a decent sponge cake. Was well impressed.

Means I will be able to bake the kids a birthday cake this year rather than buy one!

[little chickadee]

Great tip - I've been wondering about this as I used to always use medium eggs, but all our eggs seem to be large

[Rhapsody]

Why oh why can I never bake a cake that isnt manure? Tried this after all your comments........result= one very large pancake

*shrugs* dunno, but I'll come down and give you a lesson one day.

I'm sure you are brilliant at cooking other stuff.

[Rhapsody]

Thanks Clare- just tried a bit and it tastes like sugary fried bread *sigh*

[chickencam]

Oven temperature? Ovens can vary so much.

[The Dogmother]

Tell me about it - my oven is rubbish!

Are you sure that you're using SR flour?

I'm not quite that remedial Claret! *checks cupboard worriedly*

As for oven it is as rubbish as everything else in the Medieval Hovel- it has two settings

1) A gentle breath of warm air

2) Cremate

[The Dogmother]

Sounds like my oven!

Just checking re the flour - had an emergency calll from a friend the other night and she was using the wrong flour

[Louise]

You are not alone Rhapsody I love cooking but I just cannot bake to save myself everything I bake goes straight in the bin so I don't try any more

I can make some biscuits but cakes defeat me

[The Dogmother]

You do a lovely cooked breakfast though Louise

[Louise]

I can do savoury - not a problem

[Egluntyne]

I've started using the egg weighing method.....more out of curiosity that anytihng else originally.

It works fantastically well.

[The Dogmother]

I use it because my girls eggs are far smaller than regular hens eggs.

[chickencam]

It works a treat for me. YD made the sponge for a baked raspberry sponge pudding on Sunday but is isn't a victoria sandwich mix ie. equa proportions so she had to work out a third of 185 I think it was to work out the extra flour. Cooking can be so educational

Go on...............rub it in

Ahhh, so that's where you're going wrong Rhapsody.. rubbing in is for pastry - creaming is for sponges...

[Egluntyne]

That's right! :D

I use a Magimix and bung it all in at the same time.

I don't bother with this creaming the butter and sugar together and adding the egg a teaspoon at a time malarky.

[Louise]

It doesn't matter how I do it carefully or bung it in a mixer and switch on they are still rubbish

[Jules.]

Rhapsody, your posts make me

[Jules.]

Re cakes drying out in fan ovens- my old house had a gas oven & it was the best oven to use (in my opinion) for baking cakes

When/if I ever get a new kitchen I wolud like a gas oven.

[Louise]

I have a gas oven

I just can't bake

[Jules.]

Do you put the cake tin on the middle shelf, & so that the air can circulate around it?

[Louise]

It makes no difference I don't even try any more

I do shop bought cakes

[Lesley]

Next time you come to stay Louise, I'll test you!
