PurpleHen Posted April 27, 2006 Share Posted April 27, 2006 Anyone got any suggestions for healthy lunches to take to work I am trying to cut down on bread and need my ideas bucking up - I know to improve my eating, lunch is vital, but I don't want to spend all my time at home preparing it so need some easy, healthy lunch ideas please... Guest Posted April 27, 2006 Share Posted April 27, 2006 Couscous is quick and easy to do. Quinoa is too. Then you can add cucumber, tomatoes, sweetcorn etc plus nuts, avocado, tuna or something. Set your food processor blade ging at a medium speed, add the following in this order: Courgette Yellow pepper Squash or pumpkin Carrot Broccoli Tomato Red Cabbage Beetroot You can add other things but keep anything red till last or you end up with pink salad You can then add your facourite dressing. I like to add oilve oil, lemon, mint, garlic and parsley. It tastes just like a cracked wheat salad but it's all healthy raw veggies. I make one with a mixture of some of my favourite tinned beans (e.g. black eye; chickpeas; flageolet) and mix them all up with some chopped sweet red pepper, spring onion and anything else that needs using (e.g. grated carrot; olives; sweetcorn; celery; cherry tomatoes). It is especially nice if you throw in a handful of seeds, nuts or sprouting beans - or even mix in some tuna. I make a vinegarette dressing with some olive oil; cider vinegar; garlic powder and whole grain mustard. It's yummy and if you make a huge one and keep it in the fridge in a good quality storage tub (e.g. lock 'n' lock) you can make it the night before and it does lunch for two people for two days or one person for four days. Have you thought of adding wheat bran I know it is great in the GI way of thinking for helping to extent the amount of time your energy lasts for, and is also extra fibre.
