Strawberry Shortcake

This is the first recipe I make each summer when our strawberries are ready for picking. It comes from The National Cookery Book from 1931 :wink: .

 

Strawberry Shortcake

 

8oz flour

1½ tsp baking powder

2 oz butter or margarine

2oz caster sugar

¼ pint milk

 

Sieve the flour and baking powder into a bowl. Rub in the butter. Stir in the sugar and make a well in the centre. Add enough of the milk to make a soft dough. Press into a greased sandwich tin and bake at 180C for 20-25 minutes until golden. Cool on a cake rack and when cold, carefully slice in half through the middle to make 2 cakes. If you find it difficult to slice the cake in half to make the two layers, divide the dough in half and bake in two smaller sandwich tins instead.

 

Whip a carton of whipping cream until it holds its shape and spread onto the lower half of the cake. Place sliced strawberries on top of this then add the top layer of the cake and dust with icing sugar. You can put more whipped cream and strawberries on the top if you like too :wink:.

I think that strawberry shortcake is an American recipe (or at least an American term).

 

The most authentic (American) way to make it then is by using the Bisquick recipe (have done that for ages; Bisquick can be found in supermarkets--arg!), pouring crushed and lightly sweetened strawberries over the hand-sized biscuits (scones) which should be broken in half length wise.

 

Top with double cream or creme Anglaise (whipped and lightly sweetened whipped cream).

 

This however is something that the English have no need to defend themselves from the Yanks! Yes, it's delish, but so is simply strawberries and cream!!!!

It is more like scone dough isn't it? - I thought it was going to be like shortbread.......

 

I told you it was a scone dough :lol: .

 

Sorry, I meant to put "It is more like scone dough...." :lol:

 

....and the American version would probably have a synthetic version of cream on it - I couldn't ever find any decent proper cream in all the times I was there :lol:
