But they always go down well. 1.5 cups self-raising flour 0.5 cup plain flour 0.25 tsp salt 4 oz butter 1 cup sugar 1 egg 1 tsp vanilla 2 tsps milk Cream butter and add sugar gradually. Beat until light and fluffy. Add well-beaten egg, vanilla and milk. Add self-raising flour, salt and sugar and mix. Gradually work in the plain flour until the dough is firm enough to handle. Put in the fridge for at least an hour. Roll out dough to 0.125 inch and cut biscuit shapes. Put on greased baking tray and sprinkle with sugar or hundreds-and-thousands. Any one got a great Gingerbread man/chook recipe... it's all my little one will eat at the moment, and i hate buying them from Tesco's (oh did i mention that word on here) Ahem.... actually good mummy today and got some from budgens!!!... I (err he) likes them to be a bit soft in the middle and i cant do that test in the shops!!! it's a bit embarassing if i get caught!!! It was on page 21 of an old and well-used cookery book which now ends on page 20. Found this "Gingerbread People" recipe though. (I don't think the biscuit police will arrest anyone for using the dough to make gingerbread chickens.) 125 g (4 oz) plain flour 1/2 teaspoon bicarbonate of soda 1/2 teaspoon ground ginger 1/2 teaspoon ground cinnamon 25 g (1 oz) butter 50 g (2 oz) soft brown sugar 2 tablespoons golden syrup 1 teaspoon milk Sift the flour, soda and spices into a bowl. Place the fat, sugar and syrup in a pan over low heat until melted. Cool, then mix into the flour with the milk to make a firm dough. Wrap in polythene and chill for 30 minutes. Turn the dough onto a floured surface and roll out to a 5 mm (1/4 inch) thickness. Using gingerbread cutters cut out 12 figures and place on greased baking sheets. Bake in a pre-heated moderate oven, 160 C (325 F), Gas Mark 3, for 10 to 15 minutes, until firm. Transfer to a wire rack to cool. Decorate with glace' icing when cool. Guest Posted July 25, 2008 Share Posted July 25, 2008 just making some now for my friend's 2 boys, got this recipe from the MSE web site, hope it works ok (had to add a tiny splash of milk to make it dough like) 350g plain flour Up to 1 teaspoon ground ginger 1 teaspoon bicarbonate of soda 100g butter or margarine 175g soft light brown sugar 1 egg 4 tablespoons golden syrup Makes about 20 biscuits. Put the flour, ginger and soda into a bowl and rub in the butter. Add sugar and stir in the syrup and egg to make a firm dough. Roll out to about 5mm thick and cut out your gingerbread men. If you don't have a gingerbread man cutter then use whatever you have - stars and hearts are just as tasty. Bake in a 190 degree c oven for 10 to 15 mins until golden brown. Once cooled, decorate with icing. Ian and me finished off the leftover dough, would have been a shame to waste it Fingers x'd they work okay! Guest Posted July 26, 2008 Share Posted July 26, 2008 the first ones I cut were a bit cracked but that's because i realised i hadn't worked the dough enough. The last ones were the best as I'd worked the dough a few times before cutting them out. I was in a rush yesterday and chose the nicest ones to package up and then realised i hadn't taken a piccie So this is a pic of one of the slightly cracked ones which we'll eat ourselves They're very nice and i'd recommend the recipe the boys are coming round later to see the chickens. They stayed with ther nanna last night and mum and dad stayed with us and we had a really good night.
