Gingerbread men

I don't have a recipe as I bought mine to send to a friend.

 

I attached a tag with the following poem -

 

THE PERFECT MAN

They say good men are hard to find

I know this to be true

But I hunted far and wide

And found one just for you!

 

He is no good at DIY

He cannot fix the car

But his socks are never smelly

And he doesn't stray too far

 

He always listens patiently

And won't pester you in bed

If you get fed up with him

You just bite of his head!

This is the recipe I use - it makes one large Gingerbread House, or three small ones and a few biscuits as well. You could halve the recipe for just making some gingerbread men or biscuits for the tree.

 

Gingerbread

 

600g plain flour

2 level tsps baking powder

1 tsp ground mixed spice

2 round tsps ground ginger

pinch of salt

400g caster sugar

250g butter (proper stuff, not spreadable butter or margarine)

180g black treacle

2 medium eggs, lightly beaten.

 

Sift the flour, baking powder, salt and spices into a bowl.

 

In a large saucepan melt the butter until just runny, add sugar, treacle and eggs

and mix well.

 

Gradually stir in three quarters of the flour mix, stirring well.

 

Work in the rest of the flour with your hands to form a stiff dough. Add more flour if it is too sticky.

 

Place the dough in a plastic bag and refrigerate for an hour. Roll out dough on parchment paper to 5mm thick.

 

Cut out shapes and slide onto a baking sheet. Make holes for ribbon if you intend to hang them on a tree. Place baking sheet in the fridge for 15 mins so that biscuits keep their shape when cooked.

 

Bake at 180C for 12 - 18 minutes (biscuits) or 15 -20 for gingerbread house shapes.

 

Cool on a wire rack.

 

If making a house you can store the pieces for a few days so that it is a bit stronger.

I love your rhyme and might make some for a few of my friends with the rhyme attatched. My daughter who is 10 has made some and has writian her own child friendly version.

 

Here and now before your eyes

Although you may not realise

A special gift that you can eat

A lovley yummy tasty treat

Another gift that never ends

You and me, we are best friends!

I'm going to make some more, as these sold so fast today! :shock: I only have 3 left. I shall buy the girls Xmas presents with the money..tub of mealworms, oats, raisins, sweetcorn - to make their Xmas porridge cake! Shhhh don't tell :shh:

But if they carry on being naughty to Poppet the Araucana cockerel, then they shall have bumper bits in their stockings! :shameonu:

As they are still warm, they are chewy, and YUMMY :P

 

I baked mine in a fan oven at 160 degrees, for no more than 10mins, they feel squishy still ontop if that makes sense.

 

Mine are christmas trees, snowmen and men. Will make stars next time 8)
