Lesley Posted December 13, 2008 Share Posted December 13, 2008 This is the recipe I use - it makes one large Gingerbread House, or three small ones and a few biscuits as well. You could halve the recipe for just making some gingerbread men or biscuits for the tree. Gingerbread 600g plain flour 2 level tsps baking powder 1 tsp ground mixed spice 2 round tsps ground ginger pinch of salt 400g caster sugar 250g butter (proper stuff, not spreadable butter or margarine) 180g black treacle 2 medium eggs, lightly beaten. Sift the flour, baking powder, salt and spices into a bowl. In a large saucepan melt the butter until just runny, add sugar, treacle and eggs and mix well. Gradually stir in three quarters of the flour mix, stirring well. Work in the rest of the flour with your hands to form a stiff dough. Add more flour if it is too sticky. Place the dough in a plastic bag and refrigerate for an hour. Roll out dough on parchment paper to 5mm thick. Cut out shapes and slide onto a baking sheet. Make holes for ribbon if you intend to hang them on a tree. Place baking sheet in the fridge for 15 mins so that biscuits keep their shape when cooked. Bake at 180C for 12 - 18 minutes (biscuits) or 15 -20 for gingerbread house shapes. Cool on a wire rack. If making a house you can store the pieces for a few days so that it is a bit stronger. My OH wants a foolproof bendy chewy gingerbread recipe because that was what the gingerbread men were like that he ate as a child, we have only ever managed to make crunchy ones or is it something we are doing wrong? SarahJo Posted December 15, 2008 Share Posted December 15, 2008 oops - could not wait to try - As they are still warm, they are chewy, and YUMMY I baked mine in a fan oven at 160 degrees, for no more than 10mins, they feel squishy still ontop if that makes sense.
