SnowWhite Posted December 15, 2008 Share Posted December 15, 2008 If you keep eggs in the fridge you need to let them come up to room temperature for baking etc.. But to honest you don't need to keep eggs in the fridge. Now I keep mine out on show on one of the egg skelters like in the picture ANH showed. They are great as you can show off your girls hard work, but also you can easily get to your newest eggs for poaching and oldest eggs for boiling. Lesley Posted December 17, 2008 Share Posted December 17, 2008 Keeping eggs in a fridge will encourage any bacteria to be absorbed through the shell - because the frequent opening of the fridge door causes condensation on the shell. I hate to think of how old the eggs I am still getting from the supermarket are, as I can usually peel them without any trouble. Roll on the time I can get my own chickens and have really fresh eggs! Therefore it is safe to assume that any other supermarket eggs are over 9 days old!
