Marmalade Aghhhhhhh!!!!!!

Recommended Posts

Help, I hope I've done the right thing. I saw some Seville oranges in the market yesterday and bought some, never made marmalade before, I thought I would make a jelly marmalade (don't like peel).

To cut a long story short it wouldn't set, I've added the juice of 2 lemons still not looking good so I added a bag of jam sugar, I've got a setting point now but have I over boiled it is my question and will it taste alright?

Although I added the right amount of sugar for the amount of fluid I think there couldn't have been enough pectin, too hasty with the jelly bag and didn't squeeze enough pectin out of the bag full of pip mixture.

Your opinions would be gratefully appreciated as I would dearly like to make another batch.

Many many thanks Nicola

I used a can of Ma made (processed oranges) & a bag of jam sugar. I also used my jam thermometer & added green ginger wine (a glug of). It was a very good set. This was before the electric jam maker.

I always put a bit on a saucer, wait for it to cool ..then taste. If it tastes ok to you then it will be ok.

I should imagine that yours may be quite sweet because of the sugar added at the beginning, prior to the jam sugar. I might be nice though, as oranges are quite bitter anyway in marmelade.
