Veg Box

Just recieved my veg box! i love wednesdays getting home from work and my organice veg box is waiting for me! oh and my free range eggs but hopefully Ik wont be ordering them soon as my chicks should start laying!!

 

This week i've had included in it aubergines, ive never really used them in anything else apart from mossaka,

 

Any one have any nice recipes or ideas of things i can do with them?!! Ii also have an overload of carrots and am soooo fed up of carrot soup! any ideas welcome!

It freezes well :D

 

I've made carrot cake this week, as I had loads of carrots left from my Organic veg box. Mine has gone straight in the freezer until its needed!

Now THAT shows some definite will power!! Very impressive!

In Jamie at Home, he has a recipe for butternut squash muffins. They are delicious, you could easily replace the quantity of squash for carrots as he has used the carrot cake recipe. :D Hm, aubergines ... the only time I've had them is in moussaka, trouble is they soaked up so much oil when frying them, I don't think they were a very healthy veg! :lol:

I dont salt aubergines, just cut into slices sprinkle with oil, salt and pepper and herbs and roast them before putting in oven and I have no complaints about my moussaka (my OH wouldn't marry me till I could make one like Mamma used to make _ all said in a Greek accent) you could use them in ratouille, with tinned toms, peppers, onion and garlic and tom puree. all good for dieting, and some of your five a day. I stuff aubergiens as well - scoop out middles and chop and mix with cooked rice herbs S&P and anything else left over and bake sprinkled with a bit of olive oil drizzled on top - yummy. Good luck - carrot cake is yum- I make individual ones and sell at school - they are very popular - I dont add nuts cos of sons nut allergy and kids at school as well. I got recipe off http://www.deliaonline.com very easy and can be put in muffin cases if you cant resist it when cooked - very light.

we use aubergine in ratatouille too.

 

Also, in a vegetable curry that a girl on Come Dine With Me made. I gave it a go and it was delish!

 

Now I'll have a rummage for it and then post the link.
