Lesley Posted July 30, 2009 Share Posted July 30, 2009 My grandchildren made this today - it is very quick and easy and suitable for younger children as there is no boiling sugar to deal with. Magic Marshmallow Fudge (from The Usborne Yummy Little Cookbook) 450g icing sugar 100g white marshmallows 2 tbsps. milk 100g butter half a teaspoon vanilla essence a shallow 18cm/7" square cake tin. Line the cake tin with parchment or greaseproof paper. Sift the icing sugar into a large bowl, make a hollow in the middle of the sugar. Using scissors, snip the marshmallows into half and place in a small pan. Add the milk, butter and essence to the marshmallows. Heat the mixture slowly, stirring, until everything has melted. Add this mix to the icing sugar and beat until it is mixed and smooth. Spread the mix in the tin, pressing it flat with the back of a spoon. Place in the fridge for a couple of hours before cutting into squares. It would be nice with added nuts/cherries/coffee essence etc. It is quite sweet and sickly - but so quick to make. Her mother said the icing sugar amount was too much and it wasn't healthy for them.......this from the woman who chain smokes in the same room as her children, buys tons of really rubbish food and lets her daughter live off chocolate spread straight from the jar and crisps It's fine as an occasional treat.
