advice on 'use by' date

I bought some smoked salmon for christmas day but didn't use it in the end, it's dated 'use by' 26th dec. It's vacuum packed and been in the fridge. Could i use it today to make smoked salmon tagliatelle? It looks fine :anxious:

The process of smoking is a preservative measure in itself, it's been vacuum packed and it's been in a refridgerator all the time during a really cold spell. Moreover, the producer worked out the "use by" date based on the assumption you'd be eating it raw, but you're intending to cook it.

 

I agree with the first answer. Open it, sniff it and if it smells OK, use it. I'd be incredibly surprised if it wasn't fine for the purpose you're planning.

As for me, I'd sniff it, taste a tiny amount and if it seemed okay, I'd use it. You're an experienced cook.

 

I'm sure I watched a programme on the telly recently about someone who wanted to test how 'dangerous' out of date food items were. He went OTT and ate all sorts of badly out of date things; e.g. chicken, bread, cheese, yoghurt, prawns, etc. and was fine.
