I want to eat something a bit different for breakfast (not the usual toast, cereal etc) but it has to contain eggs, as my fridge is overflowing with them at the moment Has anyone got any ideas?

scotch pancakes (aka drop scones) are so quick to make and lovely with butter and jam on!

That is delicious.......or Omelettes maybe,French Toast is a big favourite here,both sweet (with cinnamon sugar) & savoury (Lea & Perrins)

i often do 'eggy bread', soak some bread in beaten egg and then fry it til golden on both sides. i then whack some ham/bacon on and then some cheese and then whack it under the grill til the cheese is all bubbly.

I once had a bad experience poaching eggs - so much so - ive never done it again

Kedgeree. That's a marvellous breakfast to set you up.

 

Alternatively, how about Eggs Benedict? Not only do you use up eggs in the poaching, you also use some in the Hollandaise sauce.

Ooh, I do that one too! But with mushroom & leek instead of bacon / sausage. On toast for breakfast or on pasta for dinner!

Marmite on toast with a lovely poached egg on top and then some freshly ground pepper on top of the egg. Yummy
