I was inspired by the rosemary bread Alys Fowler made last night on The Edible Garden and I want to have a go as I have plenty of rosemary growing in my garden... What I like about him is his recipes don't assume you have a bread maker as I prefer to make my loaves completely by hand. When you feel more adventurous invest in a copy of the River Cottage Bread Handbook which is full of bread recipes of all shapes and sizes and has become my bread bible. chickencam Posted May 8, 2010 Share Posted May 8, 2010 The key to really great bread is enough liquid, loads and loads of kneading, and giving it plenty of rising time. I have only really cracked it since I have had my Kenwood Chef Major for kneading it, my hands are too small and my patience too short and most breadmakers just don't cut it. A good tip from there is to put a baking tray with boiling water in the bottom of the oven....really helps keep the bread nice and moist....
