Rhapsody Posted April 19, 2007 Share Posted April 19, 2007 This is an anglicised version of the classic Calabrese dish (thata ma papa useda makea) Take 1 med head broccoli 1 pkt Rigatoni or Penne (allow 70g dry per person) olive oil 1 clove garlic, crushed Fresh (not revolting pre-grated) Parmesan, grated or flaked. Black pepper, freshly ground. Cook broccoli until tender,drain and leave to cool slightly. add garlic and a good glug of olive oil and salt to taste. Mash with spud masher or wizz for a few blasts in food processor- it should be blended but not without texture. Cook pasta as per instructions and drain in colander. Put broccoli mixture into empty pasta pot. Put pasta back in on top Add grated or flaked Parmesan and black pepper to taste. Stir and serve. Even my veg-hating teen will eat this Enjoy! kannie Posted April 20, 2007 Share Posted April 20, 2007 We do something similar, Rhapsody, but melt a tin of anchovies in the sauce instead of using parmesan. No salt needed.
