Rhapsody Posted April 26, 2007 Share Posted April 26, 2007 I LOVE this dish.......... 1 large onion 1 fillet firm white fish per person (cod,monkfish,hoki,etc) 2 tbsp Patak's Madras Curry Paste 1 can Coconut Milk 1tbsp veg oil (not olive) Slice the onion into long thin pieces. Fry on moderate heat in wok or large frying pan until it colours. Add curry paste and stir on low heat for a couple of minutes. Add coconut milk and stir. Cut fish into 1 inch cubes, removing any skin, add to pan. Cover pan and turn off heat. Pour a glass of wine and go and do something more interesting for 10 mins Return to perfectly cooked fish! But, last week I made the mushroom stroganoff (yum, thanks) and had bought too much creme freche, so made a curry (inspired by this recipe) using it instead of the coconut milk, and veg instead of fish. So, yes & no! Very pleased to have new suggestions though, I def. need some inspiration for easy recipes. Do you have something else I can try this week please? Much appreciated!
