Making soft cheese

I think strained yoghurt turns into a Greek-style yoghurt. I think you can make a simple soft cheese by adding lemon juice to milk that has just been boiled (the lemon juice curdles it). When it has curdled, you drain the whey from the curds and it and it becomes a soft cheese...I think a bit like cottage cheese or ricotta...?

My mum used to make this in the summer from milk that had 'turned', but yes lemon juice would probably do the trick! You wait till the milk has curdled quite thickly, and then strain it through a muslin. Mash the curds up with a bit of salt and pepper and some chopped chives (in summer) - delicious.

Our next door neighbour when I was a child used to make soft cheese by leaving bottles of milk to sour and adding salt. She must have done something else that I missed though.

I tried making soft cheese once by adding lemon to warmed milk....it was bland and nasty with a most disconcerting texture :P

I'd love to be able to do it properly....although if I could make boursin I'd be the size of a house in no time! :lol:
