Lakeland gooey brownies - NOT the best as I've found better!

I had a card from Lakeland (I always want to add Plastics on the end) today with £5 off if you spend £20 or more, and a recipe. I have just made the gooey brownie, and I have to say they are very, very yummy! Actually moist in the middle, slightly chewy around the edges and not sunk!

 

Lakeland Gooey Brownies

225g soft marg (I used unsalted butter)

110g dark choc (I used 70% cocoa)

400g caster sugar

2tsp vanilla extract

4 beaten eggs

100g walnuts (I used dried cranberries as my YD doesn't like nuts)

170g plain flour

pinch salt

1/2 tsp baking powder.

 

Melt butter and chocolate together over a low heat

Remove from heat and add sugar. Mix well

Add vanilla extract, eggs and nuts or fruit

Sift over the flour, salt and baking powder. Fold into the chocolate mixture

Pour into a lined brownie pan (I used a square one lined with baking parchment)

Bake at 160 deg c/320 deg F for 50 minutes

Remove from oven and allow to cool

 

Really quite nice still slightly warm with a cuppa tea :D Cheers!

This morning I made some more brownies but using Bill Grangers recipe. OMG! They are amazing!

 

Here you go, for taste testing purposes :wink:

 

chocolate brownies (from "bill's food' by bill granger, page 180)

 

370g (2 1/2 cups) caster (superfine) sugar

80g (2/3 cup) cocoa powder

60g (1/2 cup) plain (all-purpose) flour

1 tsp baking powder

4 eggs, beaten

250g (9oz) unsalted butter, melted

2 tsp vanilla extract

200g (7oz) chocolate buttons (i used about 100g of milk choc I had in the cupboard chopped up, but tbh you don't really need it)

 

preheat oven to 160°C (315°F/gas 2-3). stir the sugar, cocoa powder, flour and baking powder together in a bowl. add the eggs, melted butter and vanilla and mix until combined. mix in the chocolate buttons. pour into a lined 9 inch (22cm) square tin and bake for 40 to 45 minutes.

 

soooo easy. at this point, mr. g says that while the brownies are still warm, cut into eight pieces. EIGHT. my brownie pointer of the day is that after the brownies have cooled, put the whole pan into the freezer overnight, and slice 'em up when they are frozen--so much easier to cut. there's less crumbs, less gooey-ness on the knife, prettier product, and definitely less clean up.

 

I didn't try the freezing and slicing bit, so not sure how successful that would be, I just dipped my knife in some hot water between slicing and that worked perfectly well. I baked them for 45 mins in a 160 fan and they are still squidgy in the middle and oh so chocolatey :drool::drool: Enjoy :D

I use a very similar recipe in proportions but not in method. My recipe calls for beating the eggs and sugar until they are pale and thick and then adding the flour and cocoa and lastly melted butter and choc chips. My family love them and the great thing is you don't have to have dark chocolate in the cupboard because any chocolate in the cupboard gets eaten before I have a chance to make chocolate brownies. The cocoa powder seems to last longer so I get the chance to make them. Which I do whenever the egg skelter is overflowing...5 eggs in one go!

Tasted ok _ had just a noggin mind as waist goes up ten inches if I look at a brownie :lol: Cant say as I would exclaim if I didnt know these were Oreo brownies " ooh has your Brownie Queen mom made oreo brownies again?" Personally think Oreos are over rated - now expect to be banned from All things nice by the Omlet oreo fanclub :wink:
