Yes Annie - in with MIL's pants and hankies You can cook beetroot in the microwave as well - but I can't remember how long because I usually use a saucepan. I half-boiled the potatoes and grated them, with grated raw beetroot and then fried it. I did try a bit of raw beetroot and seemed just like pickled beetroot without the tang - seemed edible enough!! Nicola H Posted June 17, 2007 Share Posted June 17, 2007 You should be able to roast them whole if they are small baby beetroot, if they are larger I would cut them into quarters they will only need about 30 mins, and you will need to peel them first............I bet they taste great. We saute them in a little olive (or rapeseed) oil with a little garlic, then season & dress with lemon juice. Or steam and dress with olive oil and lemon juice.
