Em, this has been bothering me too, with my first batch due to be harvested, but I have been too to ask what I do with it! MIL says it needs boiling, but then, her generation boils everything!

Yes - you need to cook it - 20 mins in boiling water then let it cool and the skin will come off easily!

 

Just remember it's a vicious staining agent - dont get it on anything!!! and wear rubber gloves when peeling it or you get red fingers for days

You can cook beetroot in the microwave as well - but I can't remember how long because I usually use a saucepan.

 

I like baby beetroot hot, with roast veggies (new potatoes, baby onions and chunks of carrot) and a small pot of cheese fondue

I made potato and beetroot rostis with it tonight! I half-boiled the potatoes and grated them, with grated raw beetroot and then fried it. I did try a bit of raw beetroot and seemed just like pickled beetroot without the tang - seemed edible enough!!

Just picked mine - I have 4 nice sized ones which I am going to roast around a leg of Lamb tonight.

Do I need to peel/boil them before roasting do you think?

I am also having carrots from the garden with it too

You should be able to roast them whole if they are small baby beetroot, if they are larger I would cut them into quarters they will only need about 30 mins, and you will need to peel them first............I bet they taste great.

They are quite big so I will cut them into wedges I think & give the 30 mins around the lamb joint.

 

Will the hens eat the tops ,or will they make the egg yolks go pink ???

The hens will love the tops, mine eat them and have never had pink yolks...........

You can eat the tops! They're a bit like chard or spinach. We saute them in a little olive (or rapeseed) oil with a little garlic, then season & dress with lemon juice. Or steam and dress with olive oil and lemon juice.

I had a beetroot and Monterey jack Cheese sandwich for lunch......it was yumtious.

 

It did have the effect that Couperwifes mother would recognise though. Rather alarming if you are not expecting it.

Just to report back that we had our roast beetroot last night with a joint of lamb & it was truly wonderful
