Dippy Egg Posted June 19, 2007 Share Posted June 19, 2007 Try not to cut the actual beetroot, only the stalk before you boil it. This will help prevent the colour from running. I use rubber gloves too. Fresh boiled beetroot knocks the pants off any chilled pre-prepared stuff you can buy. When I am serving them its "One for me, one for the plate!" LOL Mrs Blue Sky that's funny. The first time I had the 'number 1s' effect I thought my days were numbered as I must have a lethal condition. Favourite recipe: Fresh beetroot (I don't bother peeling unless skins are really tough) grated on the bigger hole side of the cheese grater. Saute for about 5 to 7 minutes in a little butter (or olive oil). In the last minute, on low heat, stir in a dollop of creme fraiche (or not if you are being healthy) and grate some nutmeg over the top. Stir through and serve along with other vegetables. Scrum. Pickling sounds so boring compared to your suggestions... The recipe I followed said boil for 40 mins before peeling and pickling, which is what I did. They were lovely and soft and I tried a few pieces and they tasted delicious. I then read a Delia recipe online, saying its best to bake the beetroot prior to pickling, so have tried this too.. its still baking (it says 3 hours ). THEN I found a beetroot curry recipe..... sounds really interesting, so am going to do this later too. Anyone had this? As you can probably tell, theres a bit of a beetroot glut here at present.... Milly Posted June 24, 2007 Share Posted June 24, 2007 We had beetroot and potato salad for lunch - with a dressing of finely chopped red onion, mint, parsley, lemon juice and some oil and vinegar. Tasty. But a bit chilly on a day like this. The best tip anyone ever gave me (apart from warning of purple poo) was that they microwave easily, which cuts out interminable boiling. Time depends on size, but start with 5 minutes and then a couple of minutes more and check, then a couple more if not done.
