How do I use up.../this is how I use up...

Given all the topical talk about Christmas dinners, I've little doubt there'll be plenty of food left over. I know we've a "creative leftovers" thread going already, but that covers all year round, and I thought it might be sensible to start a dedicated Christmas one where people can add their pleas for inspiration with specific ingredients in mind.

 

Good idea or am I just duplicating?

Great idea! :D I'd love some tips for using up turkey, I know there are loads of things you can do with it but since I'm not normally at home for Christmas dinner, I have never had to deal with it before!

 

My tip for using up Stilton - Stilton & Cauliflower soup, I don't use a recipe, but a quick search found this one which looks easy.

I always buy a load of root veg, and make a root veg gratin... I cook thin slices of root veg in stock, put in a greased lasagne dish, then reduce the stock, thickening with butter and flour and cream, pour over the veg and top with a breadcrumb and cheese mix, bake in a medium oven for about 30 mins....

 

It's so tasty, I sometimes just buy root veg to make it, and tend to have frozen breadcrumbs in the freezer when I don't use a whole loaf :P

My OH makes a mean chinese style turkey broth, made with stock from the bones. Onion and any other veg (peppers, celery mushrooms etc you could add pretty much anything) fried with ginger garlic, chilli and five spice seasoning, then he adds the stock and some turkey. It is stunning. :D

 

There is a lovely recipe in Delia's Christmas book for a stilton, leek and potato soup, it is rich and very Christmassy.

Well, I'm going to link back to a previous time that I've posted Gratin Savoyarde. Creamy, cheesy sauce with white wine. What's not to like?

 

I must admit to using up any beef/pork/chicken dripping as is on toast for at least one of the breakfasts during the Christmas holiday. I also make sure enough veggies are left over to allow for a bubble and squeak, though my family prefer that as a dinner rather than a breakfast.

 

Has anyone a recipe for something rissole-ish that'd use up spuds and ham? I'm wavering over getting a ham because we usually end up with more than we can eat, but if I could ring plenty of changes then I might yet get one.

We normally use virtually all the ham in sarnies, but sometimes make a chicken/turkey, leek and ham pie as well with leftover fowl. Or I sometimes make a risotto with ham/cheese/leek/mushroom/onion or any combo of the above you happen to have around? Or put ham into a tomato sauce on pasta, possibly with a bit of extra pimenton or chili for pzazz? Or just cold ham, relish of your choice, possibly homemade, and baked spuds? Any leftover spuds could go in your bubble & squeak, or be the thickener in whatever soup you are making? Or ham and pea soup, or ham and lentil? Or hammy omlette? Or hammy tortilla? Or ham, eggs and chips? Think I'd better go for a lie down, getting a bit over-hammed :lol:

 

We make the leftover Xmas pud into icecream; it is easy and fabulous :D

 

Leftover veggies that haven't become soup or bubble & squeak become chook treats; it is Christmas after all :D8)

I have nabbed that recipe too....thanks,it looks delicious :drool:

 

We generally have heaps of bubble & squeak,cold meats & pickles meals (my favourite thing & by far the best bit of Christmas).

 

And I usually make a soup- I have a great recipe for a hearty Ham & Cabbage broth & throw some pearl barley in too. It freezes beautifully too.

 

The animals do pretty well out of the leftovers too :lol:

time to revive this thread, I think! I am never going to buy a whole turkey again ... six of us had turkey on Christmas Day, I have an entire turkey breast in the freezer plus about a pound of dark meat; I've made stock, the cats are so fat they can barely get through the cat-flap, and I STILL have a plateful of turkey in the fridge! Next year I'll buy a turkey crown, or maybe have a rib of beef instead.

 

Anyway ... I like the idea of Chickendoodle's turnover-style pie, but I'm at work today so may be lacking in energy tonight - the Major's Gratin Savoyarde might work, though - I've got some white wine going spare.

Yes. My plans for the Christmas starter were utterly stymied when we received a whole side of smoked salmon as an early present from a relative living overseas. Admittedly a plate of (lovely) smoked salmon with a home made loaf of dark rye bread was a delicious starter, and it went perfectly with the wine we'd already bought. However, two adults and two children were never likely to make that big a dent in 3lb of smoked fish, so I'm going to have to get inventive.

 

I've already got some pasta sauces lined up and I'm toying with the idea of a salmon and broccoli flan, but I stil doubt that'll account for all we've got left. Still, if all else fails, I'll grab some creme fraiche and a spot of horseradish and blitz the remainder into a pate....

 

Incidentally, thinking about your turkey, Olly, do you have any smoked salmon lying around anywhere? I used to do a chicken dish involving a supreme stuffed with smoked salmon and asparagus, then baked and served with a white wine/grainy mustard cream sauce. It strikes me that you could do similar by rolling the salmon and asparagus up in slices of turkey meat, securing with cocktail stick then baking in the same way. You could even wrap a spot of parma ham around the outside to help keep in the juices if you felt extravagant.

We had goose and rib of beef.

 

Not much leftovers with the goose (they don't carry a lot of meat) but, made stock from the carcass and frozen that. It will be used to make a bean cassoulet some time in the new year. The very generous supply of goose fat has been put in jars in the fridge for future roast potatoes.

 

The rib of beef was divine and, again, some nice dripping from that. We've already had two meals from the rib roasted on Christmas Day, then cottage pie yesterday (using up left over mash and the leftover beef gravy). I have cubed some of the remainder and frozen that knowing it will be used to make a beef and onion "toad-in-the-hole". I have thinly sliced the rest for future roast Sunday meal.

 

Leftover double cream and orange juice will make a homemade orange ice cream.

Aunt gave me a smoked trout - any ideas what to serve it with?

I'd serve it with a salad, new potatoes and provide either creamed horseradish as a condiment or mix some creme fraiche with some horseradish and a little milk (enough to make it pourable) in order to provide a dressing. Basically, treat in a similar way to mackerel.

We made our stilton soup today and had it as a starter to a ham and turkey salad with hot sausage rolls and quiche and yesterday we had cold turkey and chips with curry sauce and sprouts, it was actually quite yummy, a jar of chinese curry sauce from the supermarket, homemade chips from our own rooster spuds and perfectly cooked sprouts :D

 

We will probably be having our Chinese broth tomorrow, we have loads of stock left and quite a bit of turkey. Believe it or not I didn't have my first turkey sandwich of the season until lunchtime today :lol:

Can I just add that the Gratin Savoyarde recommended by the Major was absolutely delicious - I accidentally picked up the sherry bottle instead of the wine bottle, but it didn't seem to matter! Definitely one I'd do again, I am rather sick of turkey now though, so I think the cats will be eating the rest of it.

 

SpaceChick, how can you have a 'glut of eggs' at this time of year? :mrgreen:

I honestly don't know Olly :shock: They are laying their socks off like its the height of summer, and I'm not even in work to sell them :roll:

 

The inlaws have had 2 dozen off us this week (as my sister is away with her in laws and she usually has some)

 

It's absolutely amazing me :shock:
