recipes that use only tinned or dried food, pasta or rice

I have a friend who is involved in planning a church's foodbank. Foodbank will give bag of food, to last three days, to people in short term food crisis. He is on the look out for recipes that use only tinned or dried food, pasta or rice, and don't need too much cooking or equipment.

Just eaten for my lunch leftovers from yesterday - spaghetti with pumpkin and mixed beans. Leave out the pumpkin and all you would need is the pasta and a tin of mixed beans in spicy tomato or chilli sauce.

It breaks my heart to see this; we were shocked at the number of foodbanks in America :( .

 

Off the top of my head, something incredibly basic but filling and healthy which is an adaptation of something appropriately known as 'Moors and Christians' in slang:

 

Rice cooked in water or water/dried herbs or stock cube if available

Add tin of pulses (originally chick peas or black beans), mix together over very gentle heat and add any of the following:

Tin tuna/pea/ham/ox tongue etc

 

Or tomatoes on pasta:

 

Cook some pasta. Whilst that is cooking, warm through sieved tomatoes (ie passata) fron a tetrapak (I bought some yesterday which will keep to Oct 2013 ) or failing that cook out a tin of toms over a gentle heat for about 30mins with dried herbs if available, stir in a tin of tuna or ham and a tin olives and serve.

 

I'd encourage the food givers to give seasonings as well - dried herbs/spices/salt/pepper/chili - to brighten up meals. Are liquids allowed like longlife juices, oils, vinegars, mayo etc? This would broaden the range of recipes immensely.

I'm sure it must be possible to create a kind of spag bol using tins. Tomatoes would be needed, obviously and even better if they have herbs and garlic added already for flavour. Add tins of minced beef or some dried red lentils and some tinned veg eg carrots to bulk it out a bit. Then it can be served with pasta.

 

Pasta sauces in a jar might be a good idea as a base for various recipes too - for example tomato and chilli pasta sauce with tinned minced beef and red kidney beans added would make a passable chilli and could be served with rice.

If it's any use, ***this*** is a foodbank shopping list.

 

You can buy whole meals in a tin from most of the pound shops now, typically three tins for £2. These can easily be padded out with more veg to create stew type meals to feed a family, and generally done in one saucepan too. I'm sure these would be acceptable to a foodbank or is the person going to create recipe cards for people (which would be a great idea for them to keep for future reference) ?

Rice 'n' peas (carribean dish)

 

Rice

tin kidneybeans (drained)

half a can coconut milk ( or whole can if making a large amount)

water.

 

 

Put rice in pan with coconut milk and water and boil until rice is cooked should be the consistency of rissotto, add kidney beans until warmed through. Serve. Can be 'jazzed' up with some thyme if required.
