Cake Sizes - Help Please!?

Somehow, and I'm really NOT sure how, I have ended up agreeing to make, marzipan and ice a fruit cake for Mum's 80th in November. I know that I really should be making a start now so it can mature and a friend has given me her failsafe family recipe (used sine 1974!)

 

Said recipe gives quantities of each ingredient for varying sizes but not how many each size will feed :wall: Can anyone help with this please? It needs to feed 40 comfortably with a little left over (ideally!) Would a 10 square be too big? (I have decided on a square for ease of marzipanning/icing and cutting!)

Round cakes are much easier to ice (if you are using roll-out sugar paste) than square cakes, because you don't have the challenge of the corners.

 

An 11 inch round cake is the same size as a 10 inch square. An 11" round cake will use double the ingredients for an 8 inch round cake.
