craftyhunnypie Posted August 26, 2007 Share Posted August 26, 2007 When I was little my nana used to have a cupboard full of kilner jars. These were full of peach halves preserved in a sort of syrup. She also did this with pears. It was so that we could enjoy them all year round. Don't think she'd touch tinned fruit for some reason. ANyway, does anyone know any recipes for doing this as I'd love to do the same as my nana. Peaches in Brandy, Cherrries in some sort of alcohol sound good too. Charlottechicken Posted August 27, 2007 Share Posted August 27, 2007 Emma, I wanted a recipe for pears in Brandy, but just couldn't find one anywhere, so am going to make a syrup (equal quantities of sugar and water) and lightly poach my pears in it before bottling up with large measures of brandy. Snowy Posted September 5, 2007 Share Posted September 5, 2007 Just found one for pears in mulled wine: Place 500g sugar and 750ml red wine in pan, heat and stir until sugar dissolved. Add 1.25kg halved, peeled and cored pears; 1 cinnamon stick; 6 whole allspice; 6 cloves and 2 strips each of lemon and orange rind. Cover with a small plate to keep the pears submerged. Bring to the boil then reduce heat and simmer for 10 minutes or until pears are just tender. Arrange the pears in a warm, clean 1 litre clip top or preserving jar. Boil the syrup for 15 minutes, then mix 125ml of the syrup with 125ml brandy and 3 cloves. Pour over the pears to cover, seal and invert for 2 minutes. Sounds gorgeous. I adore mulled wine & you have given me inspiration to make my little mulled wine sachets in muslin - to tie to my bottles of red wine for xmas pressies! Thanks Snowy!
