Roxanne Posted November 5, 2007 Share Posted November 5, 2007 I was surprised that my hen's delicious fresh eggs make lousy hard boiled eggs for salads! They don't peel very well and I lose half the white to the shell. Is this something everyone experiences or can I suddenly not boil an egg???! Cinnamon Posted November 5, 2007 Share Posted November 5, 2007 Thats why supermarket eggs are easy to peel - they are generally a week old already. As they get older a small air gap forms between the egg & the shell, meaning you can peel without the egg white sticking to the shell. I stood there trying to peel off the shell but taking lumps of white with it in the process. To make matters worse it was the first white shelled egg I've ever cooked - I couldn't make out where I'd taken off the shell and where I hadn't!
