I just made it up as I went along so it's very easy! 8 slices white bread, buttered and cut into half Arrange half in the bottom of an oven proof dish. Cover with small dollops (this is not a precise measurement!) of mincemeat Arrange the rest of the slices on top of the mincement and cover with more small dollops of mincemeat Whisk 3 eggs and add 1 pint of milk and 2 tablespoons sugar. Pour over the bread and mincemeat. Sprinkle with a good pinch of cinnamon and plenty of freshly grated nutmeg. Bake for 1 hour at about 200c (May need to adjust to suit your own oven - mine is a fan oven and this is it's hottest setting.) And it contains eggs - can it go into the omlet cookbook? Milly Posted November 19, 2007 Share Posted November 19, 2007 My favourite for bread and butter pudding is spread with marmelade and cooked in the normal way. Yummy. And another option is made with pain au chocolat. Not a diet option, obviously. But I had it once from a bread stall where they must have had some left over and used it up in an imaginative way. I haven't made it with brioche because I never have any - it always looks a bit too "long-life" in the supermarket. Is it easy to make?
