I usually leave the rum out because I never remember to buy any . It works fine without it or you could add brandy. I haven't tried apple juice but I don't see why that wouldn't work if you wanted to try as it's only 1tsp and shouldn't affect the dough. Charlottechicken Posted December 15, 2009 Share Posted December 15, 2009 Just made one, it's not going to last long and there's only me here I put all the ingredients straight in the breadmaker and put the dough setting on. When it was done I knocked it back and left it on the radiator for 35 minutes to prove again (first time was in the breadmaker) then put it in the oven. It was done after 20 minutes and is the largest Stollen I have ever seen, and smells divine I used cranberries instead of raisins as they were cheap in Home Bargains I will try one with marzipan and melted butter with icing sugar on at the weekend Thanks for the recipe Kate, I'm never buying stollen again Quote Link to comment Share on other sites More sharing options...

But it rose beautifully and tastes gorgeous and is very light. Thank you for the recipe Not too sure how long it will last though.
