Biscuit recipes please

I'm starting to think about the village show again, and didn't do too well in the biscuit or chutney sections last year. I'd love a good excuse to bake lots of biscuits, so please could you let me know your favourite biscuit recipes.

 

Also, if you've got a wonderful chutney recipe I'd love that too. I used one last year which really didn't have that certain something chutney needs and, as you've got to leave it a few months before you can tell how good it is, I'd like to start now :lol:

I made a green tomato chutney last year. As well as the green tomatoes it had apple, ginger root, chillies, shallots, peppercorn, vinegar and sugar. I might have missed something, raisins/sultanas? I'm not sure? Anyway it was very nice, I liked the heat of the ginger and the chillies with the sweetness of the apples and the sugar. The apples also give it body, the green tomatoes gave it texture. The chillies, pepper corns, maybe something else? was in a muslim bag. ( I used a tea bag, which I cut open and shook the tea out of, does anyone else do this? It was a bit fragile but did the job)

 

As you probably won't have any green tomatoes available at the moment, maybe you could use ordinary tomatoes and a bit of sweet pepper for texture?

I'd definitely make it again, even though the smell of vinegar lingered in the house for a while!

How about some homemade Hob "Ooops, word censored!"s? This makes about 14 and they actually taste even more like hob "Ooops, word censored!"s if kept for a couple of days (if you can hide them that long).

 

75g/3oz porridge oats

50g/2oz plain flour

50g/2oz butter/margarine

50g/2oz granulated sugar

1 level tbsp golden syrup

1/2 level tsp bicarbonate of soda

 

1. Mix together oats and flour

2. Melt butter in large pan with sugar and syrup

3. Stir bicarb of soda into pan mixture

4. Add flour and oats and mix well

5. Make walnut sized balls of mixture and place them well apart on well greased baking sheets

6. Bake at Gas mark 4/350F/180C for 11 to 15 minutes

7. Let biscuits cool slightly on baking sheet before removing them to a cooling rack

Is that made of the same stuff as the muslim nappies someone mentioned the other day? :lol::lol:

I have a greta old book - the chutney is just 'per lb of veg/fruit' so very adaptable - I have made plumb, pumpkin, tomato (red & green), runner bean & beetroot - although the same basic recipe they taste very different - oh and did I mention the beetroot won 1st prize in our allotment show last year - we now call it 'award winning chutney'! And it is still good straight away - doesn't have to be stored for long - but can last for ages.

 

Basic recipe is for every 2 lb of fruit/veg ½lb sugar & ½pint vinegar - plus flavourings.

 

E.g. 2 lb tomatoes (or grated beetroot, etc.) + 1 large onion, 1 large apple, 1 clove garlic, 1-2 teaspoons pickling spices (I leave mine in to add extra flavour - if you like it hot add more chilli), 2-3 oz sultanas, 8oz sugar & ½ pint vinegar (white or brown).

 

Method - put all the fruit/veg chopped/grated (however you like it) into the pan with half the vinegar, with everything else except the sugar - simmer gently until it is soft, then add the rest of the vinegar & the sugar. Stir the sugar until dissolved and cook in an open pan until the consistency of jam - then bottle.

 

It's so simple and very tasty - beetroot is most popular in our house.
