We put our rhubarb in the freezer *after* it had been in the vodka for six weeks with the idea of making a slightly boozy crumble at a later date . I imagine that the combination of alcohol and freezing temperatures will have preserved it more than adequately! I think I will mix it with apple and make and apple and rhubarb crumble; I don't think I dare make one with just that rhubarb in! My father in law also has tons of rhubarb so will be able to get that from him. I might also have a go at the plum gin/vodka. Will let you know how I get on!
