Abbey Road Girl
Tomorrow or Friday I want to bake and ice some fairy/cupcakes to take to a Local Exchange & Trading Scheme showcase in Cambridge on Saturday. Because I want to focus on jazzy icing (fingers crossed I don't botch it!), I'm not sure about how to flavour the cakes. (I would have done lemon drizzle but that seems to restrict the icing.) I am thinking of using cinnamon and cloves with maybe a bit of nutmeg. Or I could use vanilla or leave plain. Any other suggestions?
bronze
I would stick with vanilla or plain if you're going fancy on top
Guest
or almond essence or failing that, a bit of amaretto gives sponge cakes a lovely flavour
Lesley
Much as I love cinnamon (like Sarah ) I'd stick with something plain like vanilla.
Egluntyne
I'd go for plain. Almond would be too sickly for me. Let the icing do the talking.
Karen & co.
I'd go for plain. Let the icing do the talking. Same thought here The icing might tell your brain one flavour, and the cake taste different Karen x
Guest
I made a madeira cake and added a slug of disoronno (sp?) and it was divine. Why not experiment? You won't know what YOU like til you try it. To be on the safe side, if they're for a lot of people, stick with plain or vanilla. Personally, I'm not keen on cinammon in cakes and I've never heard of cloves in a cake mix. Charlottechicken
I've never heard of cloves in a cake mix. It is most likely found in fruity and spicy cake mixtures, and goes really well with stewed fruit especially apple. If you buy some ground cloves be warned, you spend half the time sniffing it as cloves smell divine I'm tempted to try some in a cake mix now as the only flavouring
Lesley
I put cinnamon and cloves in a shortbread biscuit mix - and i can't stop sniffing the cloves either

Snowy
I'm going to have to try that one!
Abbey Road Girl
Wow, did not expect the spice sniffers to come out in force! Good for you! All the same I did buy almond essence today (also have vanilla). Will try to produce lovely fairy cakes tomorrow, but have not used the decorator's squishy bag in ages. Abbey Road Girl
Just want to add that all your contributions were marvelous. (Am going to do almond and also experiment with other flavours!)
The Dogmother
I always use a drop of vanilla essence in a plain sponge; just the ticket.
chickencam
There is quite a bit of ground cloves in the mincemeat I make at Christmas. Almond and vanilla both work really well in sponge cakes and lemon of course
