Snickerdoodles

My Mum used to make these for me and my brother when we were little. They are delicious cinnamonny biscuits which melt in the mouth. Great name too :lol: !

 

......and no, Lesley, they don't have Snickers in :wink:

 

Snickerdoodles

 

Ingredients:

250g plain flour

1/4 tsp ground nutmeg

3/4 tsp baking powder

1/2 tsp salt

125g butter, at room temperature

100g caster sugar

1 large egg

1 tsp vanilla extract

For coating:

2 tbsp caster sugar

1 tbsp ground cinnamon

 

1. Preheat oven to 180 degrees C. Mix together sugar and cinnamon for coating and place on a plate and set aside.

 

2. Combine all dry ingredients except for the 100g caster sugar and set aside. Cream the butter and caster sugar till pale and creamy, then beat in egg and vanilla till well combined.

 

3. Stir in dry ingredients and mix with a wooden spoon till you have a smooth mixture. Take a walnut sized piece of dough and roll into a ball. Roll in the cinnamon sugar coating and slightly flatten down onto a lined baking tray. Repeat with remaining dough, leaving about 5cm (2 inches) between each cookie.

 

4. Bake for 15 minutes, or till they start to go golden-brown. Remove from the oven and rest on baking tray for a minute before removing to a wire rack to cool.

I always hated them until I was expecting my ED then I craved them towards the end of the sickness phase must have been the protein element I was always starving and the only was not to feel sick was to eat :oops: They were still called Marathons then.

 

I like the sound of these biscuits my OH is laways trying to get me to make buscuits instead of cakes.

.......Kate.....what have you done?......and I thought you were my friend.....

 

I now have 18, no make that 17 snickerdoodles in front of me and they seem to like me....oops, now 16....sorry, I'm going to have to go, just remembered something very important I have to do.....

 

 

...........like bake some more :wink::lol: . I bake them in double batches now as they disappear, especially when they are warm :lol: .
